BACKYARD BURGERS


Mix up your favorite burger mix - make into burgers. While grilling the burgers, slice-up two onions into about 6 slices each. Grill them with the burgers. Grill burgers about 3-4 minutes per side or longer, untill their done. When done, place onions and burgers in some fresh buns, add your favorite condiments. Serve with some baked beans and corn-on-the-cob...ENJOY!

GRILLING STEAK
You can season steak however you want.  You can simply use some fresh cracked pepper or lightly brushing with olive oil.


Steak Grilling Times by Thickness


Thickness          Rare                 Medium             Well                

1"........................8-10...................12-14................16-20 Minutes               

1 1/2"................. 10-14..................16-20................22-26 Minutes              

2".......................12-16..................18-22................24-28 Minutes                 
 

Divide TIME in half for each side. Times are approximate and will vary depending on the type of grill, steak type & weather.

MARINATED CHICKEN


1/4 -Cup Dijon mustard

1 1/2 - Teaspoons Worcestershire sauce
2 - Tablespoons fresh lemon juice

1/4 - Teaspoon freshly ground black pepper
1/2 - Teaspoon dried tarragon

4 - Boneless skinless chicken breast halves


Combine the first five ingredients, mixing well; spread on both sides of chicken; place chicken on a plate; marinate at room temperature for about 15 minutes or for several hours in the refrigerator.
Grill, uncovered, over medium coals of Humphrey Charcoal, turning once, for 10 to 15 minutes or until juices run clear.

SOUTHWESTERN RIBS


4-6 lbs. ribs in uncut racks

1-teaspoon liquid smoke, if you can find it

1/4-teaspoon ground coriander

3/4-teaspoon ground cumin

1/4-teaspoon cayenne pepper

1 - 3 tablespoons ground chili

2 tablespoons dark brown sugar

1 teaspoon dry mustard

1/4 cup dry white wine

2 tablespoons cider vinegar

5 tablespoons Worcestershire sauce

1+ 3/4 cup ketchup

1 clove garlic, minced

1 medium onion, finely chopped


* Place ingredients (except ribs) in a saucepan and simmer. Brush on ribs.


TIPS: Ribs are best grilled indirectly, meaning that you have a fire on one side and the food on the other.  Cook ribs bone side down and let cook at least 45 minutes with sauce on top. Turn over for about 5 minutes (less if sauce starts to burn).

MEXICAN RIBS

Use fresh jalapeno if you can find it, anything from 1-4 peppers (diced) should do. The more jalapeno the better!

5 kg. Baby back ribs, in uncut racks

2 teaspoons paprika

1-teaspoon salt

1/4 - 1/2-teaspoon jalapeno sauce

3 tablespoons ground chili

1 + 1/3 cup tomato paste

2/3 cup Worcestershire sauce

1/3 cup liquid smoke, if you can find it

1/3 cup white vinegar

2/3 cup mustard

1 quart hot water

2/3 cup beef stock or beef bouillon cube dissolved in water

1/2 cup brown sugar

3/4 regular sugar

Place all ingredients (except ribs) in a saucepan and simmer. Brush on ribs.

BBQ PIZZA

1 Pound of pre-cooked meat. - It can be ground beef, Italian sausage, strips of chicken,
pork meat cut off of roast or ribs, game, etc


1 tablespoon black pepper, or to taste

1 teaspoon Tabasco pepper sauce or to taste

1-tablespoon paprika

3/4 teaspoons ground red pepper

3/4 teaspoons dry mustard

1/4 teaspoon salt, or seasoned salt, you also use garlic salt if you like.

12 taco shells, flour tortillas, pizza dough, or any flatbread

1 cup or more of any sauce you like, BBQ sauce, pizza sauce, salsa, etc

Cheese, slices or shredded, such as Cheddar, Monterey Jack cheese, American, or try a little blue cheese on chicken
Dairy sour cream and/or guacamole, and lettuce, greens, spinach, etc optional for grilled taco pizza, served on the side.


Combine ingredients in bowl or bag for seasoning mixture. Add meat to the bag, and shake to coat. Grill meat on medium hot grill until cooked to about medium doneness. Brush sauce on tortilla or flatbread, spread meat on top of sauce, cover with cheese, and grill about 8 minutes, depending on thickness of bread. Can also put into pre-heated cast iron skillet and cook on grill, until the cheese melts.
